
Acai bowls are pretty much the best thing to happen to breakfast since my Apple-Raspberry Breakfast Parfait. You can make acai bowls in a blender or food processor but I prefer a food processor because it makes the mixture like thick creamy soft serve ice cream, minus the dairy or sugar. It’s cold, sweet, creamy, crunchy, fruity, fresh, healthy, and perfect for summer.
Acai packets can be found in the frozen section next to the frozen fruit. Not sure how widely available they are at every grocery store but I find them at Whole Foods.
There are tons of fruit options to experiment with. I like cherry/blackberry, strawberry/blueberry/raspberry, and strawberry/pineapple/mango. Take a few ripe bananas, peel them, chop them, and place them in a freezer bag so you always have frozen bananas around, too.
If you use a blender you will have to add some kind of plant milk to help it blend. Any more than 1/2-3/4’s cup will make the mixture too runny, so if you’re using a blender you may have to finesse it slightly by stirring the fruit every 30 seconds or so until it comes together and gets that soft serve thing going.
My favorite granola to use is purely elizabeth. If I’m trying to be really healthy, I’ll use Hail Merry Grawnola, or if you like to make granola at home try this coconut oil granola from my site.
Top with any variety of fresh fruit you like. Other optional toppings include coconut, bee pollen, hemp seeds, goji berries, and chopped nuts. Be creative and have fun! This is a dynamite breakfast or snack!
Acai Breakfast Bowls
1 serving
1 unsweetened acai smoothie packet
1/2 frozen banana
1/2 cup frozen cherries
1/2 cup frozen strawberries
1/2 cup frozen blueberries or blackberries
1 tablespoon chia seeds
1/2 - 3/4 cup almond milk or coconut water (ONLY if you’re using a blender)
1/2 cup fresh berries/fruit (your choice - strawberries, blackberries, raspberries, blueberries, cherries, kiwi, pineapple, banana)
1/4 cup granola
additional: coconut, bee pollen, nuts, goji berries, hemp seeds, flax seeds… whatever you like!
Food Processor:
Place all fruit in the bowl of a food processor. Turn the machine on and allow it to run for 2-3 minutes, until the fruit has completely pureed and looks like soft serve ice cream. Add chia seeds, process to combine, then serve in a bowl topped with additional fresh fruit, granola, and toppings.
Blender:
Add all fruit, almond milk, and chia seeds to a blender. Blend on medium speed, stopping the machine as necessary to mix fruit with a spoon. Stop blending once the mixture is thick, fully pureed, and looks like the texture of soft serve. Serve in a bowl with fresh fruit, granola, and toppings.
