I crave peanut butter and eat a ton of nut butter and nuts so when I saw PB2 at the store I decided to give it a try.    PB2 is powdered peanuts with most of the fat removed.

The only way I use it is in smoothies.  It has all the taste and flavor of peanut but without the fat. It tastes great and I feel completely guilt free enjoying it.  It is a good way to add protein to a smoothie and kids will love this.

PB+J Smoothie
You can sub regular peanut or almond butter for the powdered peanut butter if you can’t find it, but the shake will no longer be  low in fat.   

2 heaping tablespoons PB2 (or other powdered peanut butter)

4 frozen organic strawberries

5 ice cubes

3/4-1 cup organic almond milk

1 tablespoon organic raw agave nectar, or other sweetener to taste

Place all ingredients in a blender (I use high-speed Vita-Mix) and blend until smooth.  Add more ice or almond milk to reach desired consistency.  In the photo above, I topped the shake with TruWhip, chopped peanuts and a strawberry.

    This is amazing! Like a PB&J but without the calories/fat and all the protein benefits! On regular rotation here. :)
