Smoothies are a great way to use over-ripe fruit. Today my soft, juicy, deep purple plums - too ripe to eat out of hand - are tossed in the blender with frozen raspberries, yogurt, ice, and honey.
Yogurt makes the smoothie taste, to me, like a really fresh Pinkberry; sweet, tart, creamy, and slightly tangy from the yogurt. I like Bulgarian yogurt because of its sour flavor and high amount of probiotics, the good bacteria the stomach needs to digest food. You can use non dairy yogurt or milk too.
Raspberry Plum Smoothie
Serves 2
1 cup frozen raspberries
2 ripe plums, pitted and quartered
1 cup fat free plain yogurt (dairy or non dairy)
1-2 cups ice cubes
2 teaspoons raw honey, or to taste
Place all ingredients in the blender in order they are listed. Process until smooth and ice is crushed. Taste and add additional honey if necessary. Enjoy immediately.
